How about a healthier take on classic energy balls with a twist of dark chocolate and coffee? You can make this, ahead of time, and lasts for 2 weeks if kept in the fridge, that is if you can still stop yourself once you start munching on one of these heavenly delights... plus it is a NO BAKE treat...
Here's a recipe for Dark Chocolate Espresso Energy Balls:
Ingredients:
1 cup rolled oats
1/2 cup almond butter (or any nut/seed butter of your choice)
1/4 cup honey or maple syrup
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 tablespoon finely ground coffee (use instant coffee or finely ground coffee beans)
1 tablespoon cocoa powder
1/4 teaspoon vanilla extract
1/4 cup dark chocolate (70% cocoa or higher), chopped
Optional: shredded coconut, chopped nuts, or additional dark chocolate for coating
Instructions:
In a large mixing bowl, combine rolled oats, almond butter, honey or maple syrup, ground flaxseed, chia seeds, finely ground coffee, cocoa powder, and vanilla extract. Stir until well combined.
Fold in the chopped dark chocolate chips until evenly distributed throughout the mixture.
Once the mixture is well combined, cover the bowl and refrigerate for about 30 minutes to allow it to firm up slightly.
After chilling, remove the mixture from the refrigerator. Using clean hands, roll the mixture into small balls, about 1 inch in diameter.
Optional: Roll the energy balls in shredded coconut, chopped nuts, or additional dark chocolate for coating, if desired.
Place the finished energy balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
Once firm, transfer the energy balls to an airtight container and store them in the refrigerator for up to one week.
