Aside from its many nutritional benefits, Bok Choi is very affordable and easy to find in local market and grocery stores. A bunch or a tie of bok choi is estimated to cost 6 to 10php.
Aside from simply boiling bok choi and mixing in some oyster sauce, this wonderful vegetable can also be used in salads and rolls.
Today I will be sharing with you a salad recipe using Bok Choi,
BokChoi in Ginger and Chili with Coconut Flakes and Walnut
Ingridients:
4 ties of bok choy
3 cloves garlic, finely chopped
5 scallions, finely sliced
1 bell pepper, diced small (you can use yellow for a sweeter touch, or red bell pepper, whatever color you like will do)
1⁄2 white onion
1 1⁄2 inchpiece fresh ginger, grated
1⁄2 Thai chili or Dried Chili seeds (totally optional)
1⁄4 cup Light soy sauce
1⁄4 cup dried coconut flakes
Walnuts, semi crushed (optional esp. if you have allergies to nuts, )
1⁄2 tsp. sea salt
1⁄2 tsp. ground pepper
2 tbsp. olive oil (or coconut oil)
Optional: you can add some lemon juice for a tangy taste
Direction:
1. Wash the Bokchoi thoroughly, make sure no soil debris are left in the stems leaves.
2. Blanch bokchoi in a boiling water for 15 to 20 seconds, put it in ice cold water to stop cooking process, set aside
3. Mix, Light soy sauce and olive oil in a bowl or mason jar
4., Put in finely chopped garlic, chillies, salt and pepper and grated ginger
5.. Mix or shake thoroughly
6. In a bowl pour some of the sauce mixture at the bottom of the bowl
7 Put in sliced bokchoi, diced bell pepper, onions, walnuts, scallions and dried coconut flakes
8. Pour the rest of the sauce on top of the vegies and mix thoroughly until everything is all the vegetables are covered with sauce.
9. Add salt and pepper according to taste.
Best serve with steamed fish or grilled chicken
